Buffalo Chicken Meatballs

I’m always on the search for new recipes. Something I can make in advance, and eat cold! I love hot wings, and meatballs! So why not combine the two. Mine will be made with Elk or Venison because that’s all we have!
What are some of your favorite recipes?

I am really sad that I just finished my bottle of D’Evereux Foods Paleo Hot Sauce, but it was worth it for this recipe. I can’t get enough of their hot sauce!! Make the perfect meal by serving these meatballs with some Crispy Seasoned Sweet Potato Fries and a salad or even as an appetizer.

This recipe is gluten free, grain free, dairy free, paleo and soy free.

Cycle Drills

New Years Eve Playlist

In my cycle classes, the biggest complements I get are on my music.  So I’ll try to share on here if I can remember.  This is my new Years Eve Ride.  I dont typically do themed rides, or when I do they have a little twist to them.  This one was drinks inspired of course!

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Today, I didn’t necessarily want to ride to music.  It was more in the background while we completed our drills.  The class loved it.. I even heard an, “I think I blacked out for second.”
The profile for the class is below:
Pjanoo- warm up – 3 min easy, 1 min moderate, 1 min hard, 1 min moderate out of the seat, 1 min hard out of the seat
Drills:
Negative intervals
60on/60 off- this round, the music has about the same bpm’s, I let class stay at this pace during work load, they then came up out of the saddle for the recovery.  work here was completed at moderate
60/50
60/40
60/30
60/20
60/10
60/20- here the work load increase by adding a little more resistance, now during the 60 seconds of work, they are to give it everything they have.. sprint
60/30
60/40- increase resistance a little more here
60/50
60/60- last increase on resistance
Drill # 2 45/15’s
45s flat road sprints/ 15 s standing flat- repeat 5x’s
45s power standing climb/15s power surge at same resistance- repeat 5x’s-add resistance every round
45s standing run /15s seated sprint repeat 5x’s
45s seated climb/15s sprint at same resistance- repeat 5x’s- add resistance every round
I gave about 1 min in between each drill as a break.  I have used drill #2 in an entire class, and just repeated it.
One week Left of this Paleo Challenge!
I started this challenge skeptical.  Perhaps, I had some goals in the back of my mind too that I was sure I wouldn’t reach.  What I didn’t expect was to find that just the way I was eating was about to change an issue I had been having for over a decade.
I have been plagued with super super dry skin since I was little.  When was a teenager in high school it got worse.  My skin on my abdomen and back would peel and flake.  When I would change my clothes, especially black clothing, it would be like a snow storm as I removed my shirt.  I have spent thousands of dollars at the dermatologists, getting scraped, plugged, and prescribed tons of ointments and internal medications.  My diagnoses always comes back empty… just very dry skin.  It’s painful, itchy, and embarrassing.   I have an overflowing drugstore of sugar scrubs, oils, and lotions in my bathroom. Nothing has worked.
Then, last week, I realized I wasn’t itching.  My skin wasn’t peeling, or red and irritated.  I haven’t changed any detergents so I knew it couldn’t have been that.  The ONLY thing I did change was my diet.  My husband mentioned that he noticed too.     I cant say that I have lost a ton of weight, I’m actually trying to gain muscle, nor have I noticed a different ‘feeling’.  I have the same energy level.  But this one little change could have me singing Paleo for a long time!  This may be the first Summer I wear a bikini since high school.
Technically it’s my last week….I’ll probably celebrate this weekend since its my anniversary (with a bottle of wine!), but then I’ll most likely be on to the plan again.  Plus, I just tried the best buffalo chicken soup recipe.  I’ll share it with you!
Have a great week, Stay warm!
Paleo’s Not as Hard as I thought
As of this weekend, I will have completed 3 weeks of my Paleo Challenge.  To be honest, the only thing I really miss is the wine.  *Wait does that make me an alcoholic?  I don’t have the shakes or anything, just miss the ritual.  I’ve replaced it with decaf coffee and herbal tea so I still have a nightly ritual.  I’m betting that when I do have another glass, I’ll feel horrible the next day.  I’ll let you know when that happens!
So I started out this challenge eating blocks.  You can find more out here. http://paleoblocks.com/  I’d weigh my food, and pack every night.  Now I can just sort of eyeball it.  I still need to increase my veggies, as I find that I have food left over during the day.  Week 1, I was choking down my food because I was so full.  I ended up losing 6 pounds!   Now at the end of my 3rd week, I’m down 9 pounds, and still drinking a gallon of water every day.
Paleo Food Pyramid
Paleo Food Pyramid
The worst part is my family is not eating paleo, so resisting the urge to clean my kids plates, not having a piece of toast, or a drink with the hubby is a challenge.   All in all, so far, so good.  I may be able to continue this!  (maybe some cheat days programmed in!)
Sauteed Kale ‘Yuck’
My first day of this Paelo Challenge was  a success.  Well as much of a success as you can make it.  I ate perfect.  I didn’t like all the food.  As a matter of fact, I had to choke down the kale this morning with my eggs.  So, I wont be eating it that way anymore.  This morning I had asparagus with my eggs and have been fearing the asparagus pee smell ever since!
I my ‘Box’ Decided to go with the Lurong Paleo challenge.  So technically, I’m allowed a 4oz glass of wine a night.  Well that’s like telling me I can stop after one tattoo. So I’ve chosen not to have any at all.  I’ve also started drinking one gallon of water a day.  Granted I have to get up and pee in the middle of the night like I did when I was pregnant, but that will subside.  My first day of eating was pretty boring, and so is my second day.  I haven’t had much time to plan out anything exciting, so hopefully this weekend, I can cook up some good stuff.  I’ll say that doing this with the support of my gym members is helpful.  We all weighed in together yesterday… What the hell..  I put on 15 pounds this winter while being sick, and while pre-eating before the challenge to be honest.  Self sabotage if you will. But what ever.  The point is that I am going to put on more muscle here, get stronger and become leaner.  As for my fellow gym rats, most of them want to lose weight.  I hope we’ll all crush it.  So raise your water bottle, cause here’s to day two!
This Wino is going Paleo?!?!?
doriOk So maybe not NEVER!  But I did join the Lurong (is that how you spell it) Paleo Challnege that Starts next monday!  Call me crazy.  So, I’ll journal my progress here!  Where else…  where no one can see it of course!  So I drink One glass of wine a day, nevermind my glass fits an entire bottle.  I don’t drink it every night.  Sometimes I have beer. (Just one or two.. I’m telling the truth this time.)   But what the heck.  I might as well try this thing.  So last night I finished all the wine AND beer in my house.  Which was one beer and half a bottle of wine. (The Colts were playing the Broncos so it was an easy excuse).
I’ve borrowed a Paelo cookbook on my kindle, I have a paleo 7 day plan (because I don’t mind eating the same stuff over and over), and I’m starting to ease myself into it this week.  Starting with the wine. I’ll sub it with some hot tea I think.
So I guess this is a good time to admit that I started Crossfit too.  I know its kind of a bad word where I work.  But I tried it out and I really like it.  My coach isn’t stupid like I had been lead to believe all Cross-fit coaches were (though I have met my share)  I’ve quizzed him.  He’s very intelligent and knows his anatomy and physiology.  He understands bio-mechanics and I’ve watched him work with others at the gym who are not ready to progress the lifts yet.   He knows his shit, and I like going to his gym because its not my gym.  Someone is finally correcting my form, and helping me.   So if you’re thinking about cross-fit, check it out.  Make sure your coach knows what he/she is doing and knows the body.
Back to what I was saying about this Paleo Challenge.  I told my husband I was doing it.  So hopefully he will be onboard as well. He’ll eat whatever I cook, but sometimes he buys the groceries.  Then we get Twinkies, Ho Ho’s, White Bread, Fish Sticks, Peanut butter with Honey, Whole milk, eggs and bacon, biscuits, and maybe some Brussels.
So I guess I should go eat now.  Start drinking some water, and get ready to exercise.  Its gonna be a long 5 weeks.   Wish me luck.
